How to do it

Cook the penne al dente according to the instructions on the package. Drain the pasta and rinse in cold water. Cut the broccoli in small pieces and cook for 3-4 minutes. Also drain and rinse in cold water.

Peel the cucumber and cut it into small pieces. Cut the pistachio nuts.

Cut the avocado and remove the seed. Scrub the lemon, grate the zest and squeeze the juice. Put it in a large cup and add the vegan mayonaise, sour cream and garlic. Add the chives, parsley and Tarragon and puree with a hand blender until it is a smooth sauce. Add some pepper and salt.

Mix the pasta with the broccoli, cucumber and arucola. Add the sauce and top of with the pistachio nuts. Bon appetit merci merci 🌱💚
