How to do it

Cut all ingredients in small pieces. Heat the olive oil in a wokpan and fry the onion. When soft, add the garlic, ginger and garam masala. Add salt to flavour. Stir until the smell is filling the kitchen, then add the canned tomatoes.

Add the red lentils and the stock and bring to boil. Lower the fire and let it cook for +-20 minutes. (Keep an eye on it and stir once in a while) Meanwhile, cook the rice according to the instructions on the package.

Add black peper and salt to taste. Add the coconut milk and the juice of the lime and bring to boil again. Let it cook until the curry thickens up.

Put the rice and curry in bowls and add the coriander and springonion.
