How to do it

Prepare Herbs: Wash the parsley and gather the sprigs into small bundles for easier chopping. Separate the mint leaves from the stems. Finely chop both the parsley (including stems) and mint leaves.

Prepare Lemon and Tomatoes: Grate the zest from the lemons and then squeeze the juice. Dice the tomatoes into small cubes.

Cook Bulgur: Cook the bulgur according to the package instructions. Once cooked, let it cool.

Mix Ingredients: Right before serving, combine the chopped herbs, spring onions, green chili, and lemon zest in a large bowl. Add the diced tomatoes and cooked bulgur.

Season and Finish: Season generously with salt, add plenty of lemon juice, and drizzle with a good amount of olive oil. The tabouleh should taste fresh, juicy, and tangy.
