How to do it

Preheat the oven at 200 degrees celsius. Wash the skin of the sweet potatoes and cover it with olive oil and a little bit of salt and pepper. Wrap it in aluminium foil and put in the oven for +-50 minutes (check with a fork if they are cooked well)

Cut the vegetables: the cucumber in little blocks and the cherry tomatoes in quarters. Smash the avocado with a fork and cut the feta in little blocks.

For the yoghurt sauce: add the pressed garlic and the lemon squeeze and add salt and pepper to taste.

When the sweet potatoes are cooked well. Cut it almost in half and add all the ingredients with the sauce on top. You can add more lemon if you like. ENJOY!
