Mashed sweet potato with grilled veggies

What's in it

3 big sized
Sweet potatoes
1 small sized
Broccoli
10
Cherry tomatoes
Salt
Black pepper
Chili flakes
100 g
Smoked tofu
3 handfull
Baby spinach
2 tbsp
Soy milk

How to do it

Preheat oven at 200C. Peel of skin of the sweet potatoes and cut in smalled pieces. Cut the broccoli and wash the cherry tomatoes.

Boil the sweet potato blocks with a pinch of salt for 15 minutes. Put the broccoli on a tray together with the cherry tomatoes and season it with salt, pepper and chili flakes to taste. Grill in the oven for 10-12 minutes (until the broccoli is cooked). Optional: cut the smoked tofu in small pieces and bake until crispy

When the sweet potato is cooked well - you can easily get through with a fork - puree it with the plantbased milk. Add the baby spinach and stir. Season with salt pepper and some extra chili flakes

Divide the mashed potato on the plates (i prefer bowls) and top it with the broccoli, cherry tomatoes and smoked tofu. ENJOY
