How to do it

Shred 5 cups squash with box grater or food processor and add to mixing bowl.

Add eggs, flour and sage to mixing bowl with squash and stir until combined. Line a plate with paper towels.

Liberally coat a sauté pan with vegetable oil or butter and place it over medium-high heat. Once the oil is hot, scoop 3 tbsp of the mixture into the pan, press them down. Cook the fritters for 2 to 3 minutes, then flip them and cook 2 more minutes until golden brown. Transfer the fritters to the paper towel-lined plate and immediately sprinkle with salt.
